Immune boosting pineapple smoothie - Serves 2

1 cup fresh pineapple, core included

1 peeled kiwifruit

1 large handful baby spinach/silver beet/kale

Juice from ½ small lemon

1 teaspoon finely grated ginger

½ cup mint leaves

2 tablespoons white or black chia seeds

1 cup of coconut milk/ coconut water/ or ½ cup water + ½ cup coconut cream

1 cup ice

Method Blend all the ingredients in a high-speed blender until smooth. The smoothie can be stored in the fridge in an airtight jar for up to 24 hours. Shake before serving.
